RUSTIC ITALIAN TORTELLINI SOUP

MAKES:
6 servings
TOTAL TIME:
Prep: 20 min. Cook: 20 min

INGREDIENTS

  • 3/4 pound Italian turkey sausage links, casings removed
  • 1 medium onion, chopped
  • 6 garlic cloves, minced
  • 2 cans (14-1/2 ounces each) reduced-sodium chicken broth
  • 1-3/4 cups water
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 package (6 ounces) fresh baby spinach, coarsely chopped
  • 2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
  • 1/4 teaspoon pepper
  • Dash crushed red pepper flakes
  • Shredded Parmesan cheese, optional
Tips:  substitute chicken for sausage.

Use frozen spinach.

I used hot italian sausage and added half a cup of heavy cream at the end

Use chicken broth instead of water.

DIRECTIONS

Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil.
Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender. Serve with cheese if desired.
Freeze option: Place individual portions of cooled soup in freezer containers and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.

    Zuppa Toscana

Zuppa Toscana (yes, the same one from Olive Garden)

1 pound bulk Mild or Hot Italian sausage (I use Hot, always)
1 1/4 teaspoons crushed red pepper flakes (More to taste)
    1 large onion, diced
    1 tablespoon minced garlic
5 (14 ounce) cans chicken broth
    6 potatoes, cut small
1 cup heavy cream (or 1 cup milk + 1-2 TBS. Cornstarch)
    1-2 Cups Kale, chopped.

My changes - replace Kale with 1 box of frozen spinach; reduce chicken broth in half; add one chopped red pepper; add 1 tsp basil

Cook the Italian sausage in a stock pot over medium-high heat until crumbled, browned, and no longer pink, 10 to 15 minutes. Drain, rinse (to remove excess oil) and set aside.
Saute the onions and garlic; cook until onions are soft and translucent, about 5 minutes.
Pour the chicken broth into the Dutch oven with onion mixture; bring to a boil over high heat. Add the potatoes, and boil until fork tender, about 20 minutes. Reduce the heat to medium and stir in the heavy cream, red pepper flakes, and the cooked sausage; heat through. Mix the Kale into the soup 5 minutes before serving.

This soup makes about 4-5 large bowls. It can be made vegetarian if you sub in Vegetarian Sausage Crumbles.

Crock Pot Azorean Spiced Beef Stew

    Day 309.

I got this stew recipe from my buddy Sean, and it couldn't possibly be any better. I love how I used many of the same staples in this as I do when I make traditional beef stew, but it tastes completely different due to the spices.

Sean used 2 pounds of beef, but I only used one, and stretched it with some potatoes, carrots, and tomatoes.

    The Ingredients.

--1 lb beef chuck stew meat
--5-6 cloves of garlic, smashed and chopped
--2 potatoes, chopped in 1 inch chunks
    --3 green onions, chopped
    --3 cups beef stock
--1 cup baby tomatoes, cut in quarters, or 2 large chopped tomatoes
    --1 cup baby carrots
--2 T kosher salt (1 used 1 T, but then added some more to taste near the end of cooking time)
    --1/2 T red pepper flakes
    --1 tsp all spice
    --1 bay leaf
    --1 tsp cumin
    --2 cinnamon sticks

    The Directions.

I used a 6 quart crockpot. Anything over 4 quarts will work just fine.

Put the meat into your crockpot. If you are using frozen meat, it's fine, just know it will take longer to cook and get tender.

Add the broth. Chop up the tomatoes, potatoes (ha, that rhymed!), green onion, and garlic. Throw it in.

Stir in the salt, red pepper, all spice and cumin. Float the bay leaf on top and add 2 cinnamon sticks.

Cover and cook on low for 8-10 hours, or on high for about 6. Stew tastes better the longer and slower you cook it.

    Jan's adaptation:
    1 pound beef cubes
    3 potatoes cubed
2 red peppers in large chunks
    1 large onion in chunks
    1 can fire roasted tomatoes
    1 can beef broth
    2 cups water
    3 beef boullion packets
    1/2 tsp cinnamon
    2 bay leaves
    1/2 tsp cumin
    1/2 tsp red pepper flakes
Place all ingredients in crock pot.  Cook on low for at least 10 hours.

Crock Pot Turkey White Bean Pumpkin Chili

    http://www.skinnytaste.com/2011/10/crockpot-turkey-white-bean-pumpkin.html
A perfect fall chili made with pumpkin puree, ground turkey, white beans, green chili and spices. Top this with chopped fresh cilantro, scallions, jalapeños, light sour cream, and/or reduced fat cheddar and serve it with baked chips on the side for a wonderful lunch or dinner.
I am so happy to share this one with you!!! Not all my crock pot experiments get me excited, but when they do they wind up here on Skinnytaste. The pumpkin is not sweet at all, in fact, if you don't mention it, no one would even know it's there but it does add beautiful color to the chili and for picky eaters, a great way to sneak in vegetables.
This is pretty mild as far as heat goes, if you want more kick use chipotle chili powder in place of the chili powder and use it according to your taste. Leftovers can be frozen, enjoy!

    Lentil Soup

homemade lentil soup, which isn’t really a recipe but goes like this”
2 cups dry red lentils (rinsed)
2 cans chopped tomatoes (can be seasoned or not…include all liquid)
    4 cloves chopped fresh garlic
1 chopped onion (red onion is nice and sweet)
    2 tsp chicken base concentrate
2 cups leftover finely diced ham, chicken, cooked beef, cooked ground beef (change to beef base if using beef)
    4 chopped peeled carrots
    2-3 stalks chopped celery
1 cup diced red/yellow peppers (you could use green peppers too if that’s all you have handy)
2 cups thinly sliced spinach leaves
    2 tsp dried parsley
    1 tsp black pepper
    1 tsp sea salt
    2 cups water
cook on high for 6 hrs or until lentils and veggies are done to your liking. If you like your lentil soup creamier, take out about 2-3 cups and puree in your blender or with a stick mixer and return to the pot.add 1/4 c balsamic vinegar or let individuals add balsamic vinegar to taste. top with fresh plain yogurt or sour cream. i like to add a tsp of curry powder towards the end too, but i like curry in almost everything. serve with fresh whole grain bread or rolls and a green salad.

This soup wonderful hot or cold. To save on prep time, you can use two (10-ounce) packages of frozen chopped broccoli instead of the fresh broccoli.

    Ingredients

      6 cup(s) reduced-sodium chicken broth
1 1/4 pound(s) broccoli, crowns, cut into florets (6 cups)
3 large uncooked potato(es), all-purpose variety (about 1 pound), peeled and cubed
      1 medium onion(s), chopped
      1 stalk(s) celery, chopped (medium)
    1/2 tsp table salt
      1 cup(s) fat-free skim milk
1/8 tsp hot pepper sauce, 2 drops

    Instructions

    • Bring the broth to a boil over medium-high heat in a large saucepan. Add the broccoli, potatoes, onion, celery, and salt; return to a boil. Reduce the heat and simmer, partially covered, until the vegetables are soft enough to mash, about 25 minutes.
    • Remove the pan from the heat and let the mixture cool slightly. Transfer the mixture in batches to a food processor or blender and puree. (I used my immersion blender.)
    •  Return the soup to the pan. Stir in the milk, and hot pepper sauce, then return to a simmer. Yields generous 1 1⁄2 cups per serving.
My note: soup is very thin but tastes good.  Use less broth or more broccoli next time for thicker soup.
